New in Paris: Hotel de Crillon Reopens Les Ambassadeurs Restaurant with Chef Christopher Hache

Hotel de Crillon, ParisThis Wednesday, April 14 marks the reopening of Les Ambassadeurs, the gorgeous restaurant at Hotel de Crillon, the palace situated on the world-famous Place de la Concorde in the heart of Paris. Under chef Jean-François Piège, the restaurant earned two Michelin stars. (Upon Piège's departure, the 2010 edition of the Michelin Guide removed the stars, "as is customary," explains S. Pellegrino World's 50 Best Restaurants.) Meticulous renovations have injected a dose of contemporary flair to the historic space; fresh new fabrics and furniture complement the marble inlay, mirrored panels, and crystal chandeliers. Most exciting of all: The rise of Christopher Hache as Executive Chef of this storied establishment. He's apprenticed under some of the finest chefs in the hexagon (including Eric Briffard, Alain Senderens, Eric Fréchon at Le Bristol, and Frédéric Robert at La Grand Cascade) so we're eager to see him in action at the Crillon. A few items from Le Printemps tasting menu to tempt the taste-buds: French imperial caviar with broccoli and a lemon sauce, Roasted langoustine with crispy fennel and yuzu, Roasted squab with tiny glazed onions and ravioli (in a bouillon) stuffed with squab thighs, Sweet bread with cashew nuts...
