The hottest spot in Vancouver from the 1930s on was the roof bar at the Fairmont Hotel Vancouver. The bar, which closed in the 1980s, is back for a limited time, this time as The ROOF Restaurant + Bar. The revitalized 15th floor venue blends distintive dining from Chef Cameron Balledine with spectacular views of the city. The ROOF Restaurant + Bar will operate as a pop-up restaurant until the fall and is part of the hotel's 75th anniversary celebration.
The chef brings his global experience to Vancouver, combining passion for local products with an international flare used to create classic, simple, and fresh food. The new hotspot will also offer Afternoon Tea. This refined respite from the hustle and bustle of city life offers Fairmont fine tea blended with sweet and savory bites and the breathtaking 111 meters-high north and south vistas.
The restaurant, which is open for breakfast, lunch, and dinner, will offer live entertainment Thursday-Saturday nights.
