Monte Carlo’s Hotel Hermitage Reopens Vistamar Restaurant After a Makeover

...And it's a stunner. Designer Pierre-Yves Rochon has waved his wand over Vistamar, one of the best restaurants operated by the Monte-Carlo SBM group, and now the contemporary space is flooded with natural light. Overlooking the Mediterranean, the resto at the Hotel Hermitage serves gastronomic seafood; Chef Joël Garault's menu emphasizes seasonal produce and locally-caught fish. In fact, dishes are inspired by local culture: the rockfish soup (made from fish caught by Gérard Rinaldi-- from the last of Monaco's fishing families), the famous Vistamar bouillabaisse and the autumn vegetables in barigoule with a touch of vanilla, sold by Romy from her stall at the market on Place d’Armes. Don't miss dessert-- a range of decadent hot soufflés. Choose terrace seating to dine outside and soak in the views. Tempt your palate with either the set menu or à la carte.
