Dine Al Fresco in Antigua with Galley Bay Resort and Spa

Galley Bay Resort and SpaGalley Bay Resort and Spa in Antigua takes al fresco dining to a whole new level. The luxury resort features two al fresco restaurants and three open air lounges. Executive Chef Andrew "Stan" Baxter carefully melds Caribbean with Continental into wonderfully original dishes. Enjoy breakfast, lunch, and dinner at The Sea Grape. Don't miss the weekly Caribbean barbecue, where you can sup to sounds of the waves and a live steel-drum band. For a more romantic al fresco experience, make a reservation for Gauguin. Dine in a cabana for two by candelight. The varied menu, which changes daily, blends the cuisines of the West Indies, the Pacific Rim and Europe. Recent selections have included the Blue Mountain Coffee-dusted beef tenderloin, served with a spiced mango Bearnaise, accompanied by sweet potato mille-feuille, or the cornmeal-crusted yellowfin tuna and cherry tomato confit, served with a basil aioli. If your hunger has been satisfied, finish up your meal with a drink at one of three open-air lounges. All three serve a wonderful selection of cooling Caribbean cocktails, top-shelf liquor and wines by the glass, along with nonalcoholic beverages.
